Roasted Curry Cauliflower Recipe

If you're looking for something a little different, you should try roasted curry cauliflower. It's fairly easy, but oh so flavorful! Roasted Curry Cauliflower is one of our favorite side dishes at our house, and even the 8 year old asks for seconds!

Roasted Curry Cauliflower

On top of being tasty, cauliflower is said to contain 100 percent of the daily recommended amount of vitamin C, about a quarter of the recommended daily vitamin K, and contains something called glucosinolates. (See Reference: WebMD - Health Benefits of Cauliflower) Glucosinolates help protect cells from damage and can can do things like help prevent cancer. They have anti-inflammatory, antibacterial and antiviral properties as well, so if you're looking for a great dish during cold and flu season, you may want to consider adding some cauliflower to the mix.

Curry powder as well is known for its anti-cancer, anti-inflammatory, and antibacterial properties and is also said to be good for heart health! (See Reference: Healthline - 9 Surprising Benefits of Curry Powder)

How To Make Roasted Curry Cauliflower:

  1. Preheat oven to 425 degrees Farenheit.
  2. Cut up a head of cauliflower into bite size pieces and arrange into a single layer glass 9x13 pyrex baking dish.
  3. Drizzle avocado oil over the cauliflower generously to cover it well enough so that the spices will stick to it.
  4. Generously sprinkle salt, pepper, onion powder, garlic powder, and curry powder over it so that it looks similar to the cauliflower shown on the right side of the plate in the picture here.
  5. Bake for 20 minutes or to desired tenderness. Let it cool for 5 minutes after pulling it out of the oven and serve.
